Chemically, starch is a glucose polymer, composed of amylopectin and amylose. Like any other carbohydrate, consuming starch leads to an increase in blood glucose levels. Native starch is insoluble in cold water and not easily digestible. However, when cooked in hot water, it modifies its chemical and physical characteristics. Between 50 and 70 °C, native tapioca and pea starches undergo gelatinization, resulting in increased granule size, weight, partial solubility, and improved digestibility by the body.
